Monteleone Winery’s Astragalus Etna DOC is a rosé wine made exclusively from Nerello Mascalese grapes, sourced from a single vineyard situated on the northern slope of Mount Etna, in an area characterised by volcanic soils rich in sand and ash and by significant daily temperature variations that promote a slow and balanced ripening of the grapes. The vineyard, trained using the traditional Etna bush system and often comprising very old vines, represents one of the most authentic expressions of Sicily’s volcanic terroir. Vinification is carried out using traditional methods that respect the raw material. The grapes are harvested by hand and brought to the winery in small containers, then destemmed and transferred to small vats for fermentation, where temperature control is minimal or non-existent, thereby encouraging spontaneous fermentation and a greater expression of the terroir. Maceration on the skins lasts for around 10–12 days with frequent manual punching down, a process that allows for a balanced extraction of colour, tannic structure and aromatic components. The wine then undergoes malolactic fermentation naturally and is aged for a long period in wood, generally in French oak tonneaux, followed by a period in concrete and further ageing in the bottle before release.
Characteristics of this Sicilian rosé wine
Astragalus presents a delicate, luminous pink colour. The bouquet is complex and layered, with notes of ripe red fruits, cherry and small wild berries, accompanied by floral hints of violet and dried rose, and a spicy component reminiscent of black pepper, tobacco and subtle balsamic and mineral notes typical of volcanic soils. On the palate, the wine is structured and elegant, with dense yet well-integrated tannins, good acidity and a long, consistent finish that fully reflects the character of the Nerello Mascalese grape from Mount Etna.

Excellent with shellfish, raw fish, fresh cheeses and white meats. Serve at a temperature of 10°C.
