There are eleven Dolcetto vineyards cultivated on the highest hills of Barolo, planted on calcareous soils at an altitude exceeding 350-400 metres above sea level. Specifically, the vineyards are located in the municipalities of Monforte d'Alba, Novello and Barolo. The grapes are harvested when fully ripe during the month of September and then vinified separately, selecting the best batches. Maceration and alcoholic fermentation take place in steel tanks and the final ageing takes place in the bottle for at least 3 months.
Characteristics of this Piedmont wine
Ruby red in colour, it has fruity aromas reminiscent of cherries and red fruits. On the palate, it echoes the fruity elements of the nose, with soft tannins.
Recommended pairings with this Piedmontese red wine
It is a wine of medium intensity and structure, perfect for accompanying cold cuts, cured meats, mushroom risotto or meat, but also white meats. Serve at a temperature of 16-18°C.
