This Friulian white wine enjoys a certain prestige thanks to the unique process used to make it: the grapes used are 100% Ribolla Gialla and come from the company's vineyards, where meticulous measures are taken to protect nature and animals. The bunches harvested during the harvest are perfectly ripe and intact: the secret of this prestigious wine lies in the fact that fermentation takes place in Caucasian amphorae buried underground for seven months, without the use of selected yeasts and without maintaining the temperature at a specific level. This is followed by racking and another five-month stint in amphorae, before aging in oak barrels for six years.
Characteristics of this Friulian wine
This wine falls into the category of Orange wines, meaning wines made from white grapes but vinified like red wines: this means maceration occurs, meaning the must comes into contact with the pomace. This is also why the color of this type of wine is so distinctive—orange, to be precise. This Friulian wine has a very bright amber color and an aroma profile that includes yellow-fleshed fruit, aromatic herbs, flowers, and beeswax. On the palate, a tannic texture emerges from the long maceration on the skins: the palate is full, with balsamic nuances and a good persistence on the finish.
Recommended pairings with this Friulian wine
Particularly suitable with all meat-based dishes, mushrooms, or cheeses. Serve at 12-16°C in a large glass to promote oxygenation and thus develop the bouquet. To fully appreciate this Friulian orange wine, we recommend opening it and letting it breathe for about 15-30 minutes before enjoying.
