From the vinification of grapes from the vines of Corvina 35%, Corvinone 35%, Rondinella 30% all the grapes of the company are certified organic and for some years the funds are conducted according to the principles of biodynamic agriculture. The origin is the classic DOCG of the Val di Mezzane, Veneto. For the harvest, the selected grapes are harvested by hand and stored in small crates to dry according to the traditional system, therefore free of any forcing. The vinification foresees the crushing which usually takes place at the end of February. The fermentation develops in wooden vats, spontaneously due to the natural presence of indigenous yeasts. Extract of tannins, sugars, low temperatures and the circumscribed environment which are the small oak barrels from hl. 1,18, where the wine still in fermentation is stored, condition the course of the fermentation itself by making it slow and stunted until its natural and autonomous stop, leaving in the wine the characteristic residual sugar that well identifies it.
Characteristics of this Venetian wine
The organoleptic examination of the wine shows an intense and luminous purple red aspect. The bouquet is squaderna without hesitation notes of dehydrated plum, coffee and cinnamon, tracing a profile greedy but at the same time complex and stratified. The taste in the sip is a masterpiece of finesse, and it is able to combine in an admirable way sweetness, structure and slight tannic friction, as well as a providential dose of salt and freshness.
