Produced exclusively in the best vintages, this Franciacorta Extra Brut Millesiamato is made from pure Chardonnay grapes, sourced from the historic 40-year-old vineyard of Syloz, characterised by particularly low yields. The harvest takes place from the third ten days of August, with manual collection in boxes: once the harvest is complete, the bunches are placed in a refrigeration cell for 24-36 months, to achieve better extraction of the aromas. The grapes are then pressed and fermented at a temperature between 15-17°C: this phase takes place 70% in steel and 30% in barriques. Bottle aged on yeasts for 60 months.
Features of this Extra Brut Millesimato
It has a bright straw yellow colour with golden reflections and a dense, continuous perlage. The olfactory bouquet is very intense, with hints of pineapple, dried fruit, peach and honey. On the palate it has an important mineral flavour.

Try it with appetizers made with cold cuts and cheeses, baked arista, pork leg and cotechino. Also great with sushi and sashimi. Serve at 8-10°C.
