The classification of this Apulian red wine is that of D.O.C Aglianico Castel del Monte, confirming the guarantee of origin. Its production features the exclusive use of 100% pure Aglianico grapes, trained according to biological agriculture standards. The wineyards selection for the vinification comes from the Bocca di Lupo estate in Minervino Murge in the province of Bitonto. The vinification process provides for the grapes to be harvested at the right degree of maturation, in order to enhance their phenolic potential. After the pressing, the fermentation takes place at a not higher temperature of 25-26°C in stainless steel tanks. The maceration is handled with follatures and short replacements in order to develop a well-balanced extraction of polyphenols, gradual and delicate. This process lasts 15–18 days. After the racking, the wine is directly transferred into barriques of French oak, where the 15 months malolactic fermentation takes place before being bottled. It follows a 24 months period of refinement in bottle.
Characteristic of this Aglianico wine
The organoleptic exam presents a dark ruby red wine with a wide and embracing perfume, very intense and complex. Notes of red fruits, sweet spices, tobacco and cocoa follow. Balsamic notes express themselves delightfully in the finale. The flavor is that of a full-bodied wine, pleasantly tannic, harmonious and elegant, with an extremely persistent finale.

Castel del Monte Bocca di Lupo DOC is a perfect match for red meat, feathered and furred game, lamb meat and local cuisine's typical land dishes. Excellent with seasoned cheese. At its best if poured at a temperature of 18°C in wide Ballon calyx glasses.
