The ground is poor and the age and exposition give a complexity and a structure to the Brunello Riserva “Le Macchiarelle” wine and make it a unique wine. There are three passages for the selection of each berry then there is the destemming and the pressing. The fermentation is under temperature control and the maceration takes place in stainless steel tanks with several pumping over. It follows the malolactic fermentation and then the wood aging. The aging period occurs in to two different places: a part is put in French oak barrels and the other part in medium sized barrels for at least 24 months. It follows other 6 months in bottle before being commercialized. This wine is made of 100% Sangiovese vine. The extension of the vineyard is only 2,5 hectares and the trees are, at least, 35 years old. The profit is minimum: only 3000 kg per hectare. The grape harvest is made manually and it takes place in October when the Sangiovese grapes achieved the perfect maturation.
Characteristics of this Brunello Riserva
It has an intense and lively ruby red color with garnet reflections. The smell is complex, elegant, refined rich of fruity aromas such as red fruits, prune, red and black little undergrowth fruits with sweet and fresh hints. It has also golden tobacco, white chocolate and white and black pepper fragrances. The taste is intense, with a great character and a tasty personality. It is soft but with a good tannin, present and enveloping together with a fresh and balanced acidity. The weave is thick, firm, complex, long and aromatic. The aftertaste is fruity, spicy with a great freshness. Also important the spicy aroma.
Suggested pairings with this Brunello di Montalcino RISERVA “VIGNA LE MACCHIARELLE” DOCG
It is suggested the match with game and very aged cold cuts and cheeses. It has to be served at 20°C in a wide glass after a long decanting period.
