Produced in Neive, this Piedmontese red wine from Dante Rivetti comes from pure Nebbiolo grapes grown on clay-limestone soils. After the harvest, the grapes are destemmed and gently pressed. Fermentations are carried out at controlled temperature and conducted using the reassembly method. The aging takes place in a barricade: 36 months in Slavonian oak barrels, of which 24 months in large barrels and a small part in French oak barriques. Another 18 months in a bottle follow.
Characteristics of this Piedmont wine
It has a very intense ruby red fly. The olfactory notes recall ripe cherry, plum, tobacco, leather and rose petals. On the palate it is balanced, with refined tannins and a persistent finish.
Recommended pairings with this Piedmontese red wine
Excellent with pasta with ragù, mushroom risotto, braised, stewed, cut beef. Serve at 18°C.
