Cascina Bruciata’s Barbaresco Rio Sordo Riserva DOCG is one of the most structured and long-lived expressions of Nebbiolo from the cru of the same name, situated in the municipality of Barbaresco. The grapes come from historic vineyards characterised by soils of marine origin, rich in compact, layered calcareous marl, which lend the wine depth, elegance and a distinct mineral character. The Rio Sordo cru is renowned for its ability to produce wines of great aromatic complexity and tannic structure, whilst retaining a refined and terroir-driven profile. The Riserva version is distinguished by a more rigorous production approach and a longer ageing period compared to the classic version. Vinification involves spontaneous or controlled fermentation in stainless steel, with skin contact that can last for several weeks, allowing for the full extraction of polyphenols, colour and aromatic compounds. The wine then undergoes malolactic fermentation and is aged for a long period in wood, generally in large oak casks or barriques, for a period of up to two years or more, followed by further ageing in the bottle before release. This process allows the wine to develop a balance between structural power and expressive finesse, typical of the great Barbaresco Riservas.
Characteristics of this wine from the Cascina Bruciata Winery
In terms of its sensory profile, the Barbaresco Rio Sordo Riserva boasts an intense, brilliant garnet-red colour. The bouquet is complex and layered, with notes of ripe red fruit, cherry and plum, accompanied by developed floral hints of wilted rose and violet. With aeration, tertiary components of tobacco, sweet spices, leather and light balsamic notes also emerge, reflecting the evolution of Nebbiolo over time. On the palate, the wine is full-bodied, structured and enveloping, with dense yet finely integrated tannins and a backbone of acidity that underpins the overall balance. The finish is long and consistent, with a harmonious conclusion that highlights the typical austere elegance of the Rio Sordo cru.
Recommended pairings for this red wine from Piedmont
The Barbaresco Riserva DOCG “Rio Sordo” is characterised by a substantial structure, a dense yet finely integrated tannic profile, and a marked aromatic complexity, making it ideal for pairing with rich, intense dishes. Due to its elegant yet powerful nature, it finds its fullest expression with rich, structured dishes, particularly braised or roasted red meats, game (both furred and feathered), and slow-cooked dishes that produce thick, flavourful sauces. It also pairs well with mature, flavourful cheeses, where the fatty and savoury elements of the food are balanced by the wine’s freshness and tannic structure, creating a harmonious and lingering balance on the palate. In certain culinary interpretations, it can also accompany traditional Piedmontese dishes such as tajarin with ragù or dishes enriched with truffle, thanks to its ability to stand up to intense flavours without losing its finesse. The ideal serving temperature is between 16 and 18 °C.
