Riserva Valtellina Superiore DOCG by Mamete Prevostini is produced with 100% Nebbiolo. The grapes are harvested late and selected in the best vineyards located in Sondrio, Montagna and Teglio. The harvest starts at the end of October. Considering the late harvest, the plants are all located at 400 meters above the sea level. During the winemaking, only the best grapes are selected for the pressing, that means that the ruined fruits or those hit by the mould are immediately rejected. After the elimination of stalks, the pressed grapes are poured into steel containers where the alcoholic fermentation starts. 21 days maceration on skins at 25°C, followed by malolactic fermentation in oak barrels and 30 months aging. The maturation continues in the bottle for 12 months.
Features of this Valtellina Superiore "Riserva" wine from Lombardy
Ruby red colour tending to garnet. Its spicy perfume recalls red fruits jam and rose. The taste is round, warm, intense and persistent.
Recommended food pairings whila tasting this red wine
Ideal with structured preparation with meat. Excellent with aged cheeses like “Bitto” too. It has to be served at 18°C in a wide wine glass.
