This Valpolicella Ripasso Classico Superiore from Cantina Stefano Accordini is only produced in certain vintages. After the native grapes are harvested by hand, it is made using the ‘ripasso’ technique, which consists of ‘re-passing’ or ‘bringing into contact’ the Valpolicella wine with the pomace of Amarone or Recioto for a period of 15-20 days, during which a second alcoholic fermentation takes place: this process enriches the wine's colour, aromas and body. The ageing process requires a minimum of 36 months in fine barrels.
Characteristics of this Veneto wine
It has a very intense ruby red colour. The nose is wonderful with a range of aromas of ripe red fruit, black pepper and tobacco. On the palate, it is powerful but with soft tannins. Long finish.
Recommended pairings with this red wine
Try it with boiled and roasted meats and mature cheeses. Typical dishes of the Veneto tradition: risotto with radicchio, polenta and osei, stewed eel. Serve at a temperature of 18°C.
