Valpolicella Classico Superiore Ripasso "SOLANE" DOC SANTI

A balanced technique of “ripasso” on the Amarone pomace and the passage in cherry wood, give to Corvina the softer fruity notes of Valpolicella: it’s Solane, pure expression of the Valpolicella culture and fruit of the skilful vinification of Corvina and Rondinella grapes. The origin of the vines falls within the DOC certified area of Veneto. The bunches are harvested by hand in boxes, in the first ten days of October; the different grapes are vinified separately "in red" with 15 days of maceration and with careful management of temperatures and pumping over to try to diversify the wines by enhancing the peculiarities of the grapes and the territory from which they derive. In November part of these wines, using an ancient technique wisely revisited, referments on partially dried whole grapes, enriching themselves with elegant fruity aromas and velvety tannins, while the remainder awaits the production of Amarone until February to be "Ripassata"on its pomace, thanks to which it acquires power and character. After the blend, to harmonize these opposing structural and aromatic components, the wine first matures a few months in barriques and then rests in large barrels; the aging in wood lasts for a total of 15 months. After bottling, a suitable refinement in glass precedes marketing.

A lively and deep ruby red color. The scent is typical, clean and complex, with intense hints of fresh red fruit and marasca cherry jam, wrapped in notes of vanilla. The taste has a warm and frank, balanced flavor, with an elegant spicy and toasted background. It has a strong personality thanks to the marked elegance and finesse of aromas, to the flavor and persistence in the mouth. Excellent and pleasant when young, it improves over time.
