The Pinot Grigio DOC Alto Adige is another fantastic wine of the line Impronta del Fondatore. It is produced with 100% Pinot Grigio grapes, manual picked when fully ripen and coming from selected vineyards. These grapes are soft pressed and the must has to ferment in stainless steel tanks for 8-10 days at 16°C. It follows a resting period on yeasts to acquire volume and complexity that are lately amortized by the bottle aging which lasts 6 months. All the Pinot Grigio vines are cultivated in the DOC area in Alto Adige.
Characteristics of the Pinot Grigio Impronta del Fondatore
It has a bright but delicate straw yellow color. The perfume is clean with pear and apple aromas in addition to elegant floral and citron hints appreciable in the end. The taste is dry but it is also characteristic and suitable for its long and fresh sapid taste.
Suggested pairings with this Pinot Grigio
The Pinot Grigio DOC is an excellent wine for appetizers, with sea salads, with light main courses but also with the row fish flavored with creams. It has to be taste with flavored soups and also with grilled white meats. It has to be served at 10°C in tapered and tall wine glasses.
