The vinification for this Caldaro-Kaltern Chardonnay involves a first phase of ripe destemming and the selection of perfectly healthy grapes only: this is followed by cold maceration for 10-18 hours, soft pressing, natural decanting of the must, slow fermentation at a controlled temperature of 18°C. The second phase requires a maturation that lasts for 5 months on the fine lees and that for 30% of the wine develops in tonneaux and large wooden barrels. Lastly, filtration and bottling in March. The vineyard stands in a hilly area with exposure between south and east between 350 and 450 meters above sea level. The soil is calcareous, with the presence of clay and sand. The area enjoys strong and constant ventilation.
Characteristics of the Chardonnay "Saleit" wine
Upon organoleptic examination, this wine from Caldaro Winery shows a pale and glossy straw yellow colour. The scent is largely fruity, exotic with pineapple and mango aromas, the harmonious wood is slightly perceived with light hints of vanilla. The taste on the palate is full-bodied and creamy in the mouth. Persistent with lots of fruit and length in the finish.
