Weinbeschreibung

The Montalcino Riserva of the San Polo winery is honored by the DOCG certification. There are used at 100% Sangiovese grapes and the producing soil is located in Montalcino where the San Polo winery owns 9 hectares of vines. The soils are located at 450 meters above the sea level with a South, South-west exposition and the soils is rich of limestone and clay. The cultivation method is the cordon spur pruning and the density is 7000 trees per hectare with a very low profit of 34 hectoliters per hectare. The manual picking takes place the first week of October and the grapes are put in 17 kg boxes. The Riserva is the result of a very careful selections of the grapes which are previously picked. There is a soft pressing of the grapes and it follows the fermentation is cement tanks under temperature control. Finally it takes place the malolactic fermentation in tonneaux of 500 hl which ends with a slow aging period of 24 months in tonneaux of French oak barrel and finally it occurs the bottle aging before being commercialized.

 

Characteristics of this Brunello di Montalcino Riserva

The Brunello di Montalcino Riserva has an intense ruby red color with garnet reflections. The smell has violet, little red fruits and soft coffee aromas. The taste is warm, thick and bodied. The end is long and persistent with soft and defined tannins.

 

Suggested pairings with this red wine from Tuscany

This Brunello San polo is perfect with the Fiorentina, with boar, lamb, little pig and game. It is also perfect with medium or high aged cheeses such as the Parmesan, the pecorino, the provolone and the Castelmagno. It must be served in Ballon wine glasses and it must be opened 2 hours before for let it decanting.
